Today is Election Day. What a privlege we have as US Citizens to vote. This year I've sort of been on a history kick with my reading.. I've read 1776 and the biography of John Adams. We've also watched several documentaries on the history channel.. the biography of Benjamin Franklin and one on the Revolution. I don't think it has ever hit me so hard what an amazing miracle it was that our country ever came into being. There is no earthly reason why that poorly organized, poorly funded, and fairly unpopular revolution should have ever been able to defeat the most powerful country on the planet. Surely it was only thru divine providence. Every time things seemed truly hopeless some miracle would occur that would allow the fight to go on. But the birth of our country came at no small cost. The suffering and sacrifices that those men and women endured was horrendous. How unthinkabe it is that many of us have forgotten our history and now hold so lightly those freedoms so dearly bought.
In honor of this special day I dug out a recipe that I've had tucked away in my file for years. It is called Election Day Cake. For many decades after the Revolution, Election Day was as important socially as it was politically. Special food was made, especially desserts. This particular type of cake was made all up and down the Eastern coast.. it was tradition! So last night I made cake. I plan on sharing it with several of our friends and neighbors.. I hope this election will indicate that it has occurred to our nation that we need to take Election Day seriously once again. And, you know, it never hurts to start with a good dessert!

Hey Marnie! Love this idea. You are a great patriot! Peeked in on your cooking blog and saw that yummy blueberry/jalapeno jam recipe! Wow, that is so good. Thanks for letting us be one of your recipiants. We used it a few weeks ago when Blaine had a work party here. We made jalapeno poppers and drizzled that jam over them. Oh my yum!!
